How does this Fresh Bread thing work???

What - Fresh Fresh Bread.
-   I have been approved (by the County) to sell 12 different varieties of bread and since they removed the 'recipe by recipe' approval requirement, have developed another dozen or so varieties.
-   They are 1# loaves (at least) in Artisanal style (generally round uncut loaves with a crispy crust when it comes out of the oven, but it softens over a few hours to a chewy crust)
-   Made with ingredients you can pronounce with no preservatives.  Other than the serrano/cheddar variety and focaccia, they have NO fats or oils or dairy.  Of course, they are gluten-ful.  Each bread has a label showing all the ingredients (yes, ALL) - as required by the County.
-  Two varieties are available each baking day (see When)
- Order on line (all orders subject to confirmation - if the order is denied, you get your money back).  At this time, denial would be because you are outside the delivery area and we are unable to make arrangements for pickup or that I don't have the ingredients needed for your specific variety.  The site offers:
  1. single loaf orders from the two varieties available each baking day.  
  2. advance orders (or subscriptions) where you order the 'bread of the day' for the next x number of days (you decide what x is) - which, people tell me, is the easiest way to order - without missing a delivery.

-  Made to order which means you get what you want - but it also means that it's only available when you order it.  This is unique that the bread is made to your order - and there is nothing sitting around getting old - except for my personal bread.
-  Made and baked in my home kitchen.
-  Under perfect conditions, I hand you a warm loaf.  In any event, the loaf is less than 3 hours from the oven. My 'current schedule' is for a 'bread ready time' between 6 and 6:30 pm so you have fresh bread for dinner.
- Currently, the price (with a subscription of 5 loaves or more) is $4.50 per loaf when I choose which bread to make and up to $7 per loaf for 'on demand' loaves - with the higher end being for the ones with more expensive ingredients (seeds, cheese, figs) - including delivery on Lakewood St in University City.
- Very limited capacity - and with the special attention, it's like bread your momma made (or wish she did), but easier for you.
- No matter what they say, one size does NOT fit all - so I want to get your preferences when you sign up for a subscription.

When - Mondays and Thursdays (for now)
- goal is remove the bread from the oven within 3 hours of 6pm on the baking days.  For the past 3 months, about 80% of the time, the bread is delivered still warm and about a third of the time, it is still hot - and needs to cool in your house.

Why - I love to bake bread and share it.  I can't give it away, so this is my approach.  I eat my bread in sandwiches, toast and just with butter.  There is NOTHING like fresh bread - and I get it any time I want.  But, using this approach, you can have it, too.

I enjoy the ability to have varieties of breads although I have my favorites.  If you were to try ONE VARIETY to test this out, I suggest the Rosemary/Thyme variety.  Great in so many ways - from buttered, to dipped in olive oil or balsamic vinegar, to toast, to poultry sandwiches.  It is my favorite.  Another must try is the Double Flax which has flax seed AND flax meal.  The texture and taste is different, due to the flax meal.  I continue to develop additional varieties for future addition to the lineup (after approval by the County).

The name?  My Fresh Bread Company.  I want you to say it - and mean it.  I want my operation to be your fresh bread company.

Why as low as $4.50 per loaf?    Because, at that price, I would be a customer.

Why 1# loaves? Because that's what my customers have said that they want.  You see, they say, when it comes to my door, my family eats half of the bread right away.  If they were 24 oz loaves (or bigger) we would eat more.  So, 1# is plenty.    Actually, the loaves have ranged from 18 to 23 ounces because that's the way they turn out.  If that's a problem, let me know.

I hope you can tell that this is a 'custom operation' - Tell me what YOU would like as to when and where.  Unfortunately, I cannot change the ingredients or varieties without County Health Dept approval - which approval is slow and relatively expensive.
